讓人口水直流!蕃茄牛肉麵

蕃茄牛肉麵

假日煮了一鍋亞特爸比&妞兒愛吃的牛肉湯香氣四溢加上番茄的甜味,可以吃上一大碗呢加上麵條後就是足以讓人流口水的蕃茄牛肉麵啦!不輸名店,在家也能輕鬆煮

食材

  • 熟手工刀切麵, 200g
  • 牛腱(約730g), 1顆
  • 牛蕃茄, 4個
  • 洋蔥, 1/2個
  • 老薑片, 20g
  • 辣椒, 1條
  • 沙拉油, 3大匙
  • 青蔥, 2根
  • 高湯, 2000c.c
  • 調味料
  • 番茄醬, 7大匙
  • 鹽, 適量
  • 料理步驟image步驟 1:牛番茄洗淨後,先對切→ 一分三→ 中間再切滾刀塊。步驟 2:青蔥洗淨切末,辣椒洗淨切斜片、老薑洗淨去皮切片。步驟 3:洋蔥洗淨去皮,一切四後再切成2~2.5cm片狀。image步驟 4:牛腱洗淨後對剖分成四條(較小的牛腱分兩條即可),切3cm塊狀。image步驟 5:牛肉塊放入鍋中汆燙後撈起沖水。image步驟 6:汆燙後的牛肉塊放進高湯鍋中,先以小火燉煮。image步驟 7:熱鍋,加入3大匙沙拉油,再將薑片/辣椒/洋蔥以中小火炒香,再加入7大匙蕃茄醬小火續炒至起泡,舀兩杓高湯入鍋拌勻。image步驟 8:將炒鍋內食材全部倒入已煮滾的高湯鍋中,牛番茄一併加入後,加鹽調味煮滾熄火。image步驟 9:放入電鍋中,外鍋加3~4杯水(份量外),蓋上鍋蓋按下開關,待開關跳起續燜30分鐘。※ 不用電鍋,則以小火燉煮至牛肉軟爛。※ 使用電鍋較方便不用顧火爐。步驟 10:取乾淨空鍋中裝水煮沸,將熟手工刀切麵條加熱,再次煮沸後大火煮1分鐘將麵條撈起,放入瓷碗公中。步驟 11:燉煮完成的牛肉湯,加入麵條中,再灑上適量蔥花即完成。
