黃金手工蛋餃【年菜】

坦白說,自己過去最討厭蛋餃,真正喜歡上它,始於品嚐過好友親手製作的手工蛋餃,蛋皮軟嫩且蛋香濃郁,肉餡鮮美多汁,教人讚不絕口、驚艷不已,方才知道原來蛋餃也可以如此美味,市售蛋餃外皮添加太多粉類及添加物,這才導致蛋餃失去原有風味。ㄧ顆顆煎製手工蛋餃固然費時,其風味卻相當值得挽起袖子親手製作,春節將至,趕緊動手將這些金黃飽滿的元寶包好包滿,過年圍爐討吉利。

食材

  • 蛋, 4顆
  • 玉米粉水, 1T
  • 鹽, 1/4t
  • 內餡
  • 細絞肉, 100g
  • 青蔥末, 1T
  • 醬油, 1t
  • 香油, 1/2t
  • 胡椒粉, 少許
  • 料理步驟image步驟 1:內餡材料拌勻備用。image步驟 2:蛋打散後加入玉米粉水與鹽巴拌勻,並將拌勻的蛋液過篩備用。image步驟 3:不沾鍋「不加油」,充份熱鍋後,舀一湯匙蛋液一邊倒入鍋中一邊用湯匙背面在鍋面上輕輕畫圓(勿豪邁的一次倒入以免蛋液流向鍋邊)。image步驟 4:趁蛋液還未完全凝固,表面起小泡泡後,放入1小匙內餡。image步驟 5:將蛋皮對折後,在邊緣處輕輕按合,2面稍煎一下即可起鍋。image步驟 6:多做一些冷凍保存,煮湯、鍋物或與糖醋醬汁一起烹調相當方便😋

    小撇步1、做好的蛋餃內餡是半生熟的狀態,須加入火鍋中稍煮一下或蒸熟後蘸醬享用。2、本配方約可製作約15顆蛋餃。
