薑母鴨麵線

好吃又暖胃的薑母鴨麵線🍲料多味美一碗就能解決一餐滿足你對美味的小挑剔😋

食材

  • 番鴨, 半隻
  • 麵線, 1捆
  • 薑母, 150克
  • 高麗菜, 1/3顆
  • 金針菇, 1包
  • 豆皮, 5片
  • 凍豆腐, 50克
  • 貢丸, 20克
  • 米血, 50克
  • 米酒, 半瓶
  • 水或高湯, 1500cc
  • 鹽, 1小匙
  • 糖, 1小匙
  • 藥材
  • 桂皮 ,當歸, 各2錢
  • 蔘鬚, 半把
  • 青耆 ,川芎, 各 1錢
  • 熟地, 1片
  • 料理步驟image步驟 1:高麗菜洗淨切小塊;金針菇及所有食材洗淨瀝乾備用image步驟 2:薑母洗淨拍扁可讓薑母加熱過程中提升香氣image步驟 3:番鴨剁小塊,放入滾水汆燙2~3分鐘去雜質血水,再用冷水清洗殘渣備用。image步驟 4:將鍋燒熱,倒入適量麻油,再加入拍扁薑母小火煸至金黃色image步驟 5:再加入鴨肉炒至鴨皮略呈捲縮狀image步驟 6:倒入米酒(在倒入米酒時,建議先熄火才安全)image步驟 7:3000㏄水和所有藥材及調味料,開中火煮約45分鐘,image步驟 8:再加入其他食材略滾5分鐘即可熄火。image步驟 9:將麵線先用清水洗稍微去多餘鹽分image步驟 10:盛一大碗薑母鴨湯在另一個鍋中將麵線放入麵線浮起後,即可撈起 建議烹煮時間:1~2分鐘即可image步驟 11:撈出麵線放入碗中image步驟 12:將適量薑母鴨湯加入麵中image步驟 13:最後加入適量配菜再撒些油蔥酥增加香氣就是好吃的薑母鴨麵線囉
