香甜的堅果牛奶糖香~夏威夷豆堅果塔

夏威夷豆堅果塔

簡單煮好一鍋牛奶糖液,再拌上滿滿的夏威夷豆和堅果蔓越莓。每一口咬下,都是滿滿香甜的堅果牛奶糖香,是一道家裡孩子十分稱讚的甜點。當作派對點心,或是學校分享禮也很適合♪

食材

  • 瓜地馬拉夏威夷豆, 150g
  • 熟核桃, 50g
  • 熟南瓜子, 10g
  • 蔓越莓果乾, 50g
  • 市售塔皮, 16個
  • 牛奶糖液
  • 蜂蜜, 80g
  • 糖粉, 50g
  • 動物性鮮奶油, 40g
  • 無鹽奶油, 40g
  • 料理步驟image步驟 1:量秤好所有材料。市售塔皮,從冰箱取出回溫10分鐘。image步驟 2:【塔皮烘烤】烤箱設定180度,先預熱10分鐘。再將塔皮放進烘烤15分鐘。中途須轉向調頭一次,使烤色均勻。烘烤時間一到,即取出塔皮。image步驟 3:【[牛奶糖液]製作】取一鍋,放進[牛奶糖液]所有材料,先(小火)將材料煮融化,再(中火)煮滾。(期間須隨時攪拌,以免焦底)image步驟 4:[牛奶糖液]呈黏稠狀時,即快速拌進[夏威夷豆、熟核桃],盡可能讓每顆堅果都沾到[牛奶糖液],即可關火。image步驟 5:【填裝組合】用湯匙一匙匙將沾了[牛奶糖液]的堅果,填入塔皮裡。再將蔓越莓、南瓜子稍按壓沾黏裝飾即可。(此時動作須快速)image步驟 6:【烘烤上色】烤箱設定180度,預熱10分鐘後。放進堅果塔,先烘烤12分鐘。再掉頭轉向,烘烤3-5分鐘至堅果塔上色。image步驟 7:烘烤時間一到,原本乳白色的夏威夷果,很明顯地呈現金黃烤色,即可取出放涼。充滿牛奶糖香氣的夏威夷豆堅果塔~完成♪

    小撇步1.用的是市售塔皮,直徑5.5cm,購於烘焙材料行。2.熟核桃、熟南瓜子,均購於烘焙材料行。3.堅果填入塔皮時,須留意一下各類堅果的配量。4.填入[牛奶糖堅果餡]須快速,牛奶糖液會越變越黏稠。
