蒜蓉白蝦煨冬粉

簡單又快速的美味鮮蝦料理,以鮮嫩多汁的白蝦與香蒜醬烹煮,搭配富有彈性的冬粉,口感Q彈爽口,且富含蝦膏的鮮味,是一道美味健康的佳餚。

食材

  • 白蝦, 400克
  • 冬粉, 4把
  • 薑, 4片
  • 辣椒, 0.5根
  • 蔥, 2根
  • 冷開水, 1米杯
  • 蒜蓉醬
  • 蒜頭, 4瓣
  • 辣椒, 0.5根
  • 辣椒粉, 1茶匙
  • 優質橄欖油, 20克
  • 醬油膏或蔭油膏, 1湯匙
  • 金美滿醬油, 2湯匙
  • 棕櫚糖或二砂, 2茶匙
  • 鹽, 1茶匙
  • 蔬果醋, 1湯匙
  • 料理步驟image步驟 1:橄欖油用小鍋小火加熱到冒小煙;冬粉冷水泡軟瀝乾,用約半湯匙的醬油抓上色;蔥用可飲用水洗淨後擦乾,切蔥花備用;蒜頭拍扁去皮切細末;辣椒洗淨半條切圈狀,半條切小丁;把蒜末和辣椒丁放入耐熱的碗裡,在加一匙辣椒粉;image步驟 2:熱油分次倒入醬料中,混勻;image步驟 3:加入蒜蓉醬油的調味料混勻,試味道自行微調,備用;image步驟 4:白蝦洗淨,剪去嘴和腳;開背去泥腸,洗淨瀝乾備用;image步驟 5:平底不沾鍋放少許油抹勻,擺上四片薑;把冬粉鋪進平底鍋,加入水,擺上白蝦;image步驟 6:將蒜蓉醬淋5-6湯匙在蝦子上面,擺上辣椒圈;image步驟 7:蓋鍋蓋,中火煮五分鐘後,關火燜3分鐘;image步驟 8:開蓋試吃冬粉後微調,撒上蔥花即可;可以直接上桌,或移到盤子裡享用。
