三杯雞_一鍋到底

三杯雞是一道很下飯的料理,也是餐廳點播率極高的菜餚。三杯,指的就是「醬油、米酒、麻油」這三種調味料。三杯要好吃,起鍋前別忘了淋上一大匙的麻油來增香唷♪

食材

  • 仿土雞腿肉切塊, 600g
  • 好菇道綜合菇, 1包
  • 爆香材料
  • 麻油, 2大匙
  • 薑片, 10片
  • 蒜頭, 10顆
  • 紅辣椒, 1條
  • 調味料
  • 醬油, 4大匙
  • 米酒, 8大匙
  • 冰糖, 2大匙
  • 起鍋前
  • 麻油(增香氣), 1大匙
  • 九層塔, 1大把
  • 料理步驟image步驟 1:備好所有食材。薑切薄片,蒜頭剝除外膜,紅辣椒去籽切斜刀。九層塔洗淨瀝乾水份,摘除老梗。綜合菇切除根部,撥小塊。image步驟 2:冷鍋加進(2大匙麻油),小火先煸香薑片,再加進蒜頭、辣椒片炒香。image步驟 3:接著,放進雞腿肉切塊,(中火)煎香。image步驟 4:倒進所有[調味料]後,整鍋稍加拌炒後,以(中火)煮滾湯汁。image步驟 5:蓋上鍋蓋,改以(中小火)將雞腿肉燜煮至軟熟,約15分鐘。image步驟 6:掀開鍋蓋,先以(中大火)收湯汁至約剩半碗量,再加進綜合菇略為翻炒。image步驟 7:[起鍋前]趁熱淋上(1大匙麻油)增香氣,並加進(一大把九層塔)就完成囉!image步驟 8:加進九層塔之後,就不要再蓋上鍋蓋,以免九層塔變得過黑。image步驟 9:簡單一鍋煮,下飯三杯雞~美味上桌♪

    小撇步1.用的是26cm深型平底鍋。2.用的是事先汆燙好,暫放冰箱冷藏的雞腿肉。3.如使用當天新鮮雞肉,可洗淨瀝乾水份後,直接入鍋炒。4.喜辣,紅辣椒不須去籽。5.[三杯]指的調味料就是[醬油、米酒、麻油]。6.麻油不耐高溫,冷鍋冷油小火慢煸即可。7.薑片切薄狀,可縮短薑片煸香的時間。
