日式可樂餅コロッケ

可樂餅是一種起源於十六世紀法國的油炸食物,後來在日本廣為流傳,成為日本媽媽們的家庭料理。疫情蔓延期間,政府推廣上市場採購盡可能多買而減少上街買菜的次數,因此,根莖類食材必須得納入採買項目之中。耐存的馬鈴薯就是相當不錯的選擇,利用馬鈴薯泥捏製可樂餅,配料可以變化多種樣式,如絞肉、蟹肉、海鮮、洋蔥、蔬菜、咖哩等⋯外酥內軟、營養豐富又具飽足感,大人小孩都喜愛,快變不出戲法的煮婦(夫)們不妨試試!

食材

  • 食材A
  • 馬鈴薯, 2顆
  • 奶油, 10g
  • 食材B
  • 絞肉, 150g
  • 洋蔥, 1/2顆
  • 鹽巴, 1/2t
  • 胡椒, 1/4t
  • 麵衣
  • 雞蛋, 1顆
  • 麵粉, 2T
  • 麵包粉, 40g
  • 料理步驟image步驟 1:食材大集合。image步驟 2:馬鈴薯削去外皮切塊投入快煮鍋中,加水淹過馬鈴薯塊將其煮軟,瀝乾水分備用。image步驟 3:趁熱於步驟2中加入奶油並將其搗成薯泥。image步驟 4:快煮鍋中加入少許植物油(份量外),將肉末炒至變色,投入洋蔥末炒香,加入胡椒、鹽巴調味。image步驟 5:將步驟四肉末倒入步驟3馬鈴薯泥中拌勻。image步驟 6:分成6等份捏成卵型,依序裹上麵粉->蛋液->麵包粉,靜置5分鐘回潮。image步驟 7:快煮鍋中倒入適量植物油(份量外),加熱至中油溫,投入可樂餅炸至表面金黃即可。image步驟 8:起出瀝乾油份後搭配蕃茄醬、咖哩醬汁和高麗菜絲享用,大人小孩都喜愛。
