曾經是媒體寵兒的「施記肉粽」,靠著一顆八寶帝王粽爆紅,靠的就是繡鸞阿嬤的「小任性」,每當端午前後,施記的肉粽絕對不夠賣,因為這是在地人都懂的好味道。

18年前,一位家住新店安坑的蘋果日報記者,報導肉粽店老闆娘施繡鸞獨門研發的一款八寶帝王粽,重達一斤半,裡面有北海道、鮑魚、廣東臘腸、五花肉、培根等15種料,讓「施記肉粽」立刻從新店紅遍整個台北。

施繡鸞阿嬤生於台南望族,嫁到台北後,發現這裡的肉粽配料無法滿足她挑剔的嘴,乾脆自己動手包,來自濁水溪的長糯米,米香包覆各種配料,大火得煮7小時才能熟透,客人吃得好滿足,不紅也難。

施繡鸞的好口碑肉粽不只有帝王粽,還有八寶干貝粽、台南肉粽、花生粽等等,即使平日也讓她與兩個兒子張慕全、張慕春忙得人仰馬翻,加上她對粽子的要求極高,水煮時間得控制得宜,糯米的口感能軟不能爛,才不會膩,且巨大肉粽綑綁時得用力,不能捆得太緊或太鬆,否則蒸煮的時候,容易整顆破碎、前功盡棄。大哥張慕全回憶起這些,話語間仍透露出對母親的佩服。
