梅子燒雞翅

酸甜紫蘇梅燒煮出開胃可口的雞翅料理,好吃又下飯;梅子的微酸帶出濃郁風味,紫蘇梅的果肉酸甜融合,醬汁燒煮入味,雞翅軟嫩多汁,含豐富蛋白質和礦物質,是開胃又營養的佳餚。

食材

  • 二節雞翅, 500克
  • 國姓紫蘇梅, 10顆
  • 蔥, 2根
  • 辣椒, 0.5根
  • 醃料
  • 蒜頭, 2瓣
  • 薑, 3片
  • 紫蘇梅, 5顆
  • 醬油, 0.5湯匙
  • 黑胡椒粉, 少許
  • 調味料
  • 醬油, 0.5湯匙
  • 鹽(調整用), 適量
  • 棕櫚糖或二砂(調整用), 適量
  • 料理步驟image步驟 1:雞翅洗淨瀝乾;image步驟 2:在雞翅背面劃刀;紫蘇梅取梅肉,蒜拍扁去皮切片,薑切片;image步驟 3:雞翅、梅肉和籽、薑片和蒜片放ㄧ鍋;image步驟 4:加入醃料調味拌匀靜置20分鐘醃入味;image步驟 5:蔥洗淨切段,把蔥白和蔥綠分開放;辣椒斜切;image步驟 6:鍋熱放少許油,將醃好的雞翅正面朝下煎;image步驟 7:正面煎上色後,翻面續煎上色;image步驟 8:將醃料裡的梅子籽拿掉,剩下的都倒入鍋中,放入蔥白炒香;image步驟 9:再加入整顆的紫蘇梅和少許醬油煮滾,加入水剛好淹過雞翅,蓋鍋蓋燜煮10分鐘;image步驟 10:開蓋試醬汁鹹甜度做微調;加入蔥綠與辣椒拌炒收汁即可。

    小撇步調味取決於所用的紫蘇梅的甜、酸度自行調整。
