一鍋到底🥘焦糖紅燒肉

童年記憶中,餐桌上總少不了這道焦糖紅燒肉,阿公扒著澆淋上滷水的大碗白飯,滿足的直呼:「別項攏免,但一定曖捂滷肉。」這道焦糖紅燒肉一鍋到底一點兒也不難,輕輕鬆鬆就能端出家常味。家常菜迷人之處,在於樸實無華、真淳恬淡,在於與家人一起品嚐滋味溫潤而不矯情的家庭料理中傾心交談,傳承自家(傳統)的風味,讓「家」的文化臍帶能夠延續下去。

食材

  • 三層肉, 600g
  • 青蔥, 1支
  • 老薑, 1塊
  • 大蒜, 6顆
  • 紅蔥頭, 6顆
  • 調味料
  • 砂糖, 2大匙
  • 醬油, 4大匙
  • 清水, 2米杯
  • 料理步驟image步驟 1:三層肉切塊(約1*2cm),青蔥切段,老薑切片,大蒜、紅蔥頭去皮備用。image步驟 2:熱鍋投入肉塊煸至表面變色及出油。image步驟 3:投入蔥、薑、蒜、紅蔥頭拌炒。image步驟 4:將肉塊撥至鍋邊,倒入2大匙砂糖煮至融化起泡,與肉塊一起拌炒。image步驟 5:投入醬油、清水、辣椒煮滾後加蓋中小火燉煮20-30分鐘,熄火後悶10-20分鐘即可享用。image步驟 6:香噴噴的焦糖紅燒肉完成啦!!

    小撇步燒肉完成後可再加些水來煮豆乾或油豆腐,不必再調味味道也不會變喔!
