蒜蓉沙茶蒸蝦

天冷時就想吃點帶沙茶的味道,用蒜蓉和沙茶蒸大白蝦,底下再墊上冬粉,這一盤好料吃巧也吃飽。

食材

  • 大白蝦, 半公斤
  • 冬粉, 4把
  • 蔥, 4根
  • 醬汁
  • 蒜頭, 6瓣
  • 薑, 1小塊
  • 辣椒, 1根
  • 沙茶醬, 1湯匙
  • 醬油, 1.5湯匙
  • 鹽, 1茶匙
  • 棕櫚糖或二砂, 2茶匙
  • 黑胡椒粉, 少許
  • 米酒, 2湯匙
  • 淋油
  • 橄欖油, 3湯匙
  • 麻油, 3湯匙
  • 花椒, 1湯匙
  • 料理步驟image步驟 1:冬粉冷水泡軟後剪1刀;薑去皮、蒜頭、辣椒和蔥洗淨;image步驟 2:蝦洗淨,剪去嘴、蝦鬚和蝦腳後,從背後剪開再用刀畫開,清除泥腸後洗淨,用刀背輕輕剁切蝦殼和蝦肉,讓蝦攤平;image步驟 3:盤裡鋪上冬粉,image步驟 4:將蝦排在冬粉上;image步驟 5:蔥用可飲用水洗淨擦乾,切蔥花;蒜壓成泥、薑磨泥,辣椒去籽切細丁;image步驟 6:加入醬汁調味料;image步驟 7:拌勻;image步驟 8:淋在蝦肉上;image步驟 9:滾水蒸15分鐘;image步驟 10:撒上蔥花;image步驟 11:淋油裡加入花椒小火加熱到花椒週圍起泡泡,飄出香味時,用濾網撈掉花椒;image步驟 12:將油淋在蝦上即可;

    小撇步家裡鍋子和盤子不夠大,分兩盤蒸也很可以。
